Picture a warm field in Mexico thousands of years ago, where a bright orange gourd sits on the ground, plump and round like a giant ball. That orange gourd is a pumpkin, a kind of squash that grows on a long, curling vine. Pumpkins have thick shells, stringy insides, and flat seeds you can roast and eat. Did you know pumpkins are actually a fruit, not a vegetable, because they grow from a flower and hold seeds? Those seeds are exactly what people first cared about long before anyone dreamed of pie. Pumpkins were among the earliest plants grown by people in the Americas, farmed in Mexico for thousands of years. Native American farmers grew them alongside corn and beans ina clever team called the Three Sisters. The corn gave beans a pole to climb, the beans fed the soil, and the wide pumpkin leaves shaded the ground and kept away weeds. Working as a team meant nothing was wasted, and neither was the pumpkin itself. Native Americans ate pumpkin roasted over fire and dried thin strips of it so it would last through the cold winter months. They even wove dried strips into mats, turning food into something useful. Can you imagine eating pumpkin nearly every day and still finding new ways to use it? Europeans arriving in the Americas had never seen anything like it, so they had a lot to learn. Settlers were taught by Native Americans how to grow and cook the strange orange fruit, and they soon carried its seeds back across the ocean. One early recipe hollowed out a whole pumpkin, filled it with milk and spices, and baked it in hot ashes. That bubbling, spiced pumpkin was a distant cousin of the pumpkin pie we know today. From that ashy first try, the pumpkin became a star of American autumn. Today people carve them into grinning lanterns, bake them into pies, and stack them on porches when the leaves turn orange. Farmers now grow giant pumpkins for contests, and the heaviest ones can weigh more than a small car. Not bad for a humble gourd that started as a handful of seeds in a Mexican field long, long ago!
