We routinely touch multiple surfaces and food products. We use the restroom. We take out the trash. We handle dirty dishes. We handle raw meat and poultry during \npreparation. We clean food prep surfaces. \nBy washing our hands frequently and then putting on disposable gloves, we minimize the chances that ready-to-eat foods will be cross-contaminated. Gloves are a second line of defense (after handwashing) against the transmission of foodborne illnesses caused by Salmonella, E. coli, Shigella, Hepatitis A virus, and Norovirus. \nQ: When must food workers wear disposable gloves? \nA: Whenever they are handling ready-to-eat foods (except when they are washing fresh fruits and vegetables) . \nQ: What must food workers do before putting on disposable gloves? \nA: They must wash their hands thoroughly for at least 20 seconds using soap and warm water. \nQ: When should a food worker change their gloves? \nA: A food worker should change their gloves: \n• After handling soiled equipment or utensils such as dirty dishes or silverware \n• Whenever their gloves become soiled or contaminated \n• When their gloves get torn or punctured \n• When switching between working with raw food and working with ready-to-eat food (to prevent cross-contamination) \n• After coughing, sneezing, using a handkerchief or disposable tissue, using tobacco products, eating, or drinking \n• After touching bare human body parts other than clean hands and the clean, exposed portions of their arms \n• After using the restroom \n• After caring for or handling animals \nFood Safety & Environmental Services \n(304) [757-2541 | pchdwv.org](757-2541 | pchdwv.org) \nQ: What are some examples you have seen of improper glove use? \nA: Here are some examples of improper glove use observed by local health department sanitarians: \n• A food worker wearing disposable gloves took the trash out to the dumpster and then resumed work cutting up melons without washing their hands and putting on clean gloves. The food worker’s gloves were contaminated by opening and closing the dumpster. \n• A food worker was observedwearing gloves while breading pieces of raw chicken and putting them in the fryer. While wearing the same gloves, the worker turned around to the sandwich board and proceeded to make sandwiches. Changing tasks from working with raw foods to ready-to-eat foods is a source of cross-contamination. \n• A food worker stopped work making salads, took off their gloves to run the cash register, and then put the same gloves back on to resume making salads. Remember, disposable gloves are single-use utensils. \n• A food worker was observed leaving the restroom wearing gloves and returned to work to prepare tacos without first removing their soiled gloves, washing their hands, and putting on clean disposable gloves. \n• A dishwasher wearing gloves loaded dirty dishes and tableware into the dishwasher and then, after the dishwasher ran, removed the clean dishes and silverware from the dishwasher while wearing the same gloves. \n• A food worker was observed washing their soiled gloves rather than removing them, washing their hands, and then putting on a new pair of disposable gloves. \n• A food worker wearing disposable gloves used dirty potholders to remove a tray of biscuits from the oven, and then \nwithout changing gloves or washing their hands, used their gloved hands to pick up the biscuits and put them on a customer’s plate. \n• A food worker assembled hamburgers while wearing gloves with holes in them. \nA GOOD TIP TO FOLLOW: Instead of putting a box of disposable gloves on your prep line, put them in a dispenser mounted on the wall next to your hand sink. This way food workers will be reminded to always wash their hands before putting on clean disposable gloves. \nFood Safety & Envi","cbCaiuktwoB5iyED","https://ap.wps.com/l/cbCaiuktwoB5iyED","pdf",2205622,"English","# Using Disposable Gloves Properly\n## Why Food Workers Must Wear Disposable Gloves\n## When Gloves Are Required\n## Handwashing Before Gloves\n## When to Change Gloves\n## Examples of Improper Glove Use\n## Good Tip: Use a Glove Dispenser","[{\"question\":\"Why are food workers required to wear disposable gloves?\",\"answer\":\"Hands are a common vehicle of contamination in a kitchen, especially when workers touch multiple surfaces and food products, use the restroom, and handle dirty dishes.
