The type and size of cookware, the number of surface elements in use, and their settings will affect heat distribution. The radiant surface elements have a gradual temperature rise. They will glow red as they heat up, and cycling on and off maintains the selected setting. To maintain consistency, turn off the element several minutes before cooking is complete. Use the chart to determine the correct setting for the type of food you are preparing. The lower Simmer settings are ideal for delicate foods, while higher settings are better for stews and soups.
