It also enables surplus supplies of grain to be sold at higher prices once the harvest period is past.  \nSun drying  \nAll grain must be thoroughly dried before storage. Sun drying is the simplest and cheapest way to do this.  \nWooden pallets  \nStoring sacks on the floor allows damp to rise and spoil the grain. Locally-made wooden pallets prevent this.  \nNatural fibre sacks  \nPlastic or synthetic bags make the grain ‘sweat’ and encourage mould. Sacks made from natural fibres, like jute, are better because they keep the grain drier.  \nInsecticide  \nInsect pests can spread fungal spores. A small quantity of insecticide sprinkled on the floor under the wooden pallets will keep pest levels low. Where available, the leaves of the neem tree (Azadirachta indica) can also be used to deter pests.  \nHuman health risks from mould  \nMould can develop in grain that is not fully dried before storage, or that becomes damp during storage. Many people think this is just a nuisance, making their food taste less good. However, mouldy grain can be much more serious. It can contain a chemical known as aflatoxin. This chemical is stored in the body. It stops children from growing to their full potential and it also makes them less resistant to disease. In some countries it is one of the major causes of liver cancer in adults.  \nThe main cereal crop likely tobe affected by the type of mould that produces aflatoxin is maize. Maize  \nis the most popular staple in many parts of the world.  \nHowever, all post-harvest cereals need to be properly dried before storage.
