red, rounded, hard as--wel1,hard as beets. \nI know a woman \nwho grew a garden last summer, planted it with nothingbut lettuce and beets. The lettuce didn't growbut she had plenty of slugsand beets, plenty of beets. Now whenever anyone visits hershe takes them down cellar,says,\"See my beets?\" \nAnd there they are, pickled, row after row of dark red jarsno one will ever open. \nSomeone else I know \nalways asks for beets,no matterwhat kind of restaurant we're in.Even at the beach \nhe'l1 go up to the hot dog stand.\"Got any beets?\"he'11 say.And when the man at the grilljust stares at him,he sighsand turns away, and spendshalf an hour just staring at the waves. \nI know what you're thinking. \nWhy don'tI introduce these friends, have them both to dinnerone night, serve vegetarian? It's not so easy. \nRemember,beets is our subject, and beets is what I hate about them both. \nWOMAN SITTING AT THE MACHINE,THINKING \nshe thinks about everything at once without making a mistake.no one has figured out yet how to keep her from doing thisthinking while her hands and nerves also perform every delicatecomplex function of the work.this is not automatic or deadening.it is learned.try it sometime.make your hands move quicklyon the keys, fast as you can, while you are thinking about: \nthe layers, fossils.the idea that this machine she controlsis simply layers of human workhours frozen in steel, tangledin tiny circuits, blinking out through miniature lights likehot red eyes.the voice of the machine they all sometimes wigout to,giddy, zinging through the shut-in space, blitheringatoms, everyone's hands paused midair above the keys, whileNeil or Barbara solo, wrists telling every little thing, feetblipping along, shoulders raggly. \nshe had always thought of money and things as solid and stopped.but when you see it as moving labor, human hours, why thatmeans it comes back down to her hands on the keys, shoulderaching, brain pushing words thru fingers thru keys, into themachine.it means her time layers up too, resulting in thosecrisp black ants on the galleys,or in the weight and textureof an instrument, like that slim
