INTRODUCTION  \nNowadays, ultrasound is considered as a versatile energy that is being successfully used in ﬁelds as diverse as medicine, navigation, or industry. Ultrasound is an energy form associated with sound at frequencies above those detected by the human ear. In fact, this energy is used in many industrial applications, such as homogenization, emulsiﬁcation, extraction, crystallization, degassing, defoaming, cleaning, etc. Ultrasound has advantages in these processes, particularly in terms of rapidity, selectivity, reproducibility, operation under soft conditions, and energy saving. These last beneﬁts make it possible to consider ultrasound as a green or sustainable technology. Several of the “12 principles of green engineering”(Anastas and Zimmerman, 2003) are fulﬁlled when ultrasound is used.  \nIn this context, in recent years, food, pharmaceutical, cosmetic, or alimentary industries using classical extraction techniques, such as soxhlet extraction, maceration, hydrodistillation, etc., have been concerned about sustainability issues. As a result, new extraction techniques have been implemented to reduce energy consumption, emissions, and costs and, incidentally, increase safety and quality of products (Handa, 2008) . Among the different possibilities, ultrasound-assisted extraction (UAE) plays an important role as a tool for extraction of bioactive compounds from plants, fruits, algae, fungi, bacteria, and even animals, both at laboratory and industrial scales. Natural products usually needing extraction times over several hours or days by classical solideliquid extraction methods can be successfully extracted by UAE within minutes. This acceleration is due to different ultrasound effects that give rise to cell wall disruption and enhanced mass transfer. In addition, less restrictions on potential usable solvents (enabling the use nontoxic solvents, i.e., ethanolewater mixtures are often used) and a reduction of the solvent consumption can be highlighted.  \nWater Extraction of Bioactive Compounds. Cambridge, Woodhead Publishing, Horwood Publishing Series in Chemical Science.  \nIn the range of sound frequency (Fig. 11.1), ultrasound is situated above 16 kHz (the upper limit is not clearly deﬁned) (Mason and Peters, 2011; Bendicho and Lavilla, 2013) .  \nIn turn, considering the energy for inducing vibrational motion of the medium molecules, this range can be divided in low-power (high-frequency) ultrasound (LPU, with frequencies higher than 100 kHz) and high-power (lowfrequency) ultrasound (HPU, with frequencies between 16/20 and 100 kHz) . LPU (usually 1e10 MHz) is used for noninvasive analysis. For this purpose, changes in the velocity, attenuation, or frequency of ultrasound can be used. HPU is implemented in many industrial applications cited above (including UAE) as a result of its physical and chemical effects. Fig. 11.2 shows some industrial uses of HPU and LPU.  \nEffects of HPU rely on the cavitation phenomenon. The microbubbles that are generated under ultrasound irradiation cause the disruption of biological cell walls and facilitate the solvent penetration, thus improving the extraction of bioactive components. HPU for extraction purposes can be accomplished using baths or probes designed on the basis of the speciﬁc application, both at laboratory and industrial scale (in this last case, considerably more difﬁcult to achieve) .
