Za’atar’s roots stretch back to ancient Egypt and it has been used for millennia as a seasoning, folk remedy, and cultural symbol. \nLike many spice blends, recipes differ from region to region and family to family, but many of the blends you’ll find today are composed of herbs such as thyme, oregano, marjoram, ora combination of the three, along with other spices like sesame seeds, sumac, and cumin. \nCulinary Uses: Za’atar is a versatile blend and can be used in savory baked goods, as a dipping condiment when mixed with olive oil or sprinkled on labneh, and as a marinade for meats fish and vegetables. In Oman, za’atar is used to make tea. The odds are, once you try it, you’ll find ways to incorporate it into anything and everything. \nHealth Benefits: \nZa’atar dates back to biblical times and was known as “brain food.” By the 12th century, it was prescribed to treat ailments like colds, indigestion, flatulence, congestion, and parasites. Medieval texts also credit it with curing bad breath; today, products like Listerine contain thymol derived from the same plant family. \nIn modern Palestine, za’atar is often eaten in the morning for mental alertness. Research suggests it may reduce the risk of heart disease and diabetes, while sumac may help lower blood glucose and reduce the risk of dementia. \nFun Facts: Za’atar refers both to the spice blend and to a family of wild herbs native to the Middle East. \nZa’atar plants were significant to many ancient civilizations. Remnants of the za’atar plant were even found in Tutankhamun’s tomb! \nZ A ’ AT A R C H A L L A H \nYield: 2 loaves \nIngredients: \nFor the leaven: \n 2 scant tsp./9 grams instant yeast \n 2 tsp./ 10 grams sugar \nFor the dough: \n 3 large eggs \n 4 tsp./20 grams honey \n 4 Tbsp./60 grams sugar \n 4 scant cups/900 grams flour \n 6 Tbsp./90 grams extra virgin olive oil, plus more for oiling the bowl \n 3 tsp./ 15 grams kosher salt \nFor topping: \n 1 large egg \n 2 Tbsp. everything bagel seasoning \n 2 Tbsp. Za’atar \nInstructions: \n1. MAKE THE LEAVEN: In a small bowl, whisk together the yeast, sugar, and 1 ½ cups/350 grams lukewarm water. Let sit for 5-10 minutes, until the top begins to bubble. \n2. MAKE THE DOUGH: In the bowl of a stand mixer fitted with the whisk attachment, beat the eggs on medium speed until very fluffy. Turn the mixer to low and slowly add in the yeast mixture. Once combined, add the honey and sugar \n3. Turn the mixer off and sift in ⅓ of the flour mixture. Mix on low until just combined. Switch out the whisk for the dough hook. Sift another ⅓ of the flour in and mix until just combined. Repeat with the rest of the flour. Mix on low until the dough forms a smooth ball. \n4. Add the olive oil and mix until just combined. Let rest for 10-15 minutes. Repeat with the salt and let rest for 10-15 minutes more. \n5. Lightly oil a large bowl. Turn the dough out on a lightly floured surface and knead lightly to form a ball. Gently place the ball in the oiled bowl and turn so it has light coating of oil. Cover with plastic wrap and let rise until doubled in size (~ 3 hours) . \n6. Line two baking sheets with parchment paper. Turn the dough out on a lightly floured surface and divide into 12 equal balls. Roll each ball into a long strand about 15 inches long. \n7. Working on a flat surface, pinch six of the strands together at the top. \na. Cross the far right strand over the other five strands. \nb. Take the second from left strand and cross it over the other four stands. Pull the far left strand into the middle, so it’s third from the left. \nc.
