When it comes to sequestering carbon, the answer is a resounding ‘Yes!’  \nCapable of capturing carbon 35 times faster than the tropical rainforests, and described by WWF (the World Wide Fund for Nature) as an ‘incredible tool’ when it comes to fighting the climate crisis, eelgrass absorbs at least 10% of the oceans’carbon annually, despite the fact that it covers just 0.2% of the seabed.  \nThis species of seagrass is the most wide-ranging marine flowering plant in the Northern Hemisphere. Eelgrass thrives in cooler ocean waters in the North Atlantic and North Pacific, and is found in many types of coastal habitat. It even grows in the Arctic region, where it endures several months of ice cover per year.  \nAn individual plant of eelgrass bears both male and female flowers in separate, alternating clusters.  \nZostera marina  \nIn due course the female flowers produce seeds, perhaps as many as several thousand seeds per square metre of grass. Eelgrass can also spread by vegetative means, from its roots. Successfully combining both methods of reproduction, eelgrass often forms vast meadows that offer food and shelter to many different types of fish, shellfish, and other marine life. It is a favourite food of several species of waterfowl, and these birds may also help to spread it far and wide.  \nNor is that all that eelgrass has to offer. Like other grasses, it has seeds that can be used for human food. Unlike the grasses cultivated for food on land — staples such as rice, wheat, barley or rye — eelgrass needs no ploughing, fertilising or freshwater to enable it to flourish. What it does need is to be spared the ill-effects of too much human activity in and around the shallow, saline waters which constitute its home.  \nUntil recently, only one small people-group in Mexico is known to have used eelgrass as a source of human food. Yet its gluten-free seeds are high in protein and can be cooked in the same way as rice, or ground into flour to make bread or pasta.
