A Condé Nast Traveler Hot List honoree, Pi Sa swiftly earns the reverence.  \nCambodian cuisine is in the middle of a fullscale renaissance. A new generation of chefs, farmers, and food writers are breathing life back into culinary traditions carried orally for centuries, many of which came dangerously close to vanishing. Chef Nak, the author of the award-winning cookbook Saoy, has spent years crisscrossing the country to sit with the elders who still hold these recipes in memory. “Each dish I remembered or learned from an elder became a seed of healing and remembrance,”she says. When she champions a restaurant that understands where its food comes from, people listen.  \nPi Sa is that restaurant. Chef Sothea Seng opened it last year inside a century-old colonial building in Phnom Penh’s French Quarter, steps from the Old Market where his kitchen sources produce every morning. The cooking is modern Cambodian fine dining that stays tethered to tradition without clinging to it. Seng previously built Lum Orng, Cambodia’s first farm-to-table  \nFlooded with natural light, Pi Sa’s dining room balances colonial-era details with a distinctly Khmer sensibility.  \nAt the Old Market, Phnom Penh’s culinary memory moves through these streets long before it reaches the plate.  \nrestaurant, in Siem Reap. Pi Sa is his bet that the capital is ready for the same ambition. “I want to preserve our Cambodian culinary traditions but innovate them in a way that can reflect contemporary tastes and preferences,” he says.  \nThe menu follows the river and the soil. Marble goby from the Mekong arrives with vermicelli and light soy one week, lobster sour soup fragrant with lemongrass the next.
