On Bougainville, it is one of the people's main cash crops. Many families have planted cocoa plantations and cocoa is their source of income.  \nChildren often help their parents harvest the cocoa during their free time. They like it because they enjoy sucking the sweet pulp from around the cocoa beans and because sometimes they get to share some of  \nBefore coca is exported, it must be processed. This is what happens in our plantation at harvest time:  \nHarvesting  \nDuring harvest time, we only pick the ripe, yellow and red pods. We leave the green ones to ripen on the trees. We use knives, hooks with a cutting blade, or secateurs and gather the pods in a big pile in a central place in the plantation.  \nPod Breaking  \nWe crack open the pods with heavy sticks. Knives are discouraged, as they tend to cut the beans and spoil them. We put the beans into bags and take them to the fermentary.  \nFermenting  \nWe weigh the beans carefully. We get one kina per kilo for the raw beans. The beans have to ferment for seven days. Each day the beans are shovelled from one fermenting box to the other, so that the pulp can drain out quickly.  \nDrying  \nAfter seven days, we spread the beans out on a drying rack. We use the hot sun, and we also light afire underneath to dry the beans thoroughly. We have to turn the beans over continually during this time. When the beans turn brown and feel light and crispy, and have a nice cocoa smell, we know they are ready. This takes a few days.  \nExporting  \nThe best beans are put into cocoa beanbags ready for exporting. Each bag should weigh 63 kilograms. The bags are stamped with the owner's number, then sold to buyers who export them. The price depends on the world cocoa market. It can be as low as K200 a bag, or as high as K350 .
