Introduction  \nThinned peaches are the superfluous growing fruits that are thinned out at approximately a month after the full-bloom stage, and they are characterized by a high abundancy of bioactive compounds such as polyphenols, amino acids and organic acids. In particular, the polyphenol content in thinned peaches are approximately 8 times higher than the corresponding ripe fruit (Guo, Bi, Li, Lyu, Wu, & Xu, 2020). Many health benefits attributed to fruits consumption are correlated with the presence of phenolic contents (Makhtoomi et al., 2024). Furthermore, a number of in vitro and in vivo trial-based reports have exhibited that increasing dietary consumption of polyphenols can reduce the incidence of chronic diseases such as diabetes, stroke, cardiovascular disease and cancer (Bohn, 2014; He et al., 2017). However, the bioaccessibility and metabolic transformation of polyphenols during digestion is a key aspect to their biological effects (He et al., 2017; Yinet al., 2022). In this regard, Brown et al.
