Heat ¼ cup vegetable stock in a large Dutch oven or pan, add the onion, and cook until tender. \n2. Sprinkle over the spices and fresh ginger. Stir well. \n3. Add the celery and garlic, cook for a further 3 minutes \n4. Add the chickpeas, combine well making sure the chickpeas are coated in the spices. \n5. Pour in the crushed tomatoes and vegetable stock. Bring to the boil, turn down to a simmer and partially cover the pot. Allow to simmer away for about 30-40 minutes, stirring occasionally. \n6. Scatter the baby spinach or kale into the pot, they will wilt in the heat of the liquid. Stir to combine. \n7. Remove from heat, garnish with plenty of fresh cilantro or parsley, anda swirl of cashew cream if desired. \nBang Bang Cauliflower (cont.) \nINSTRUCTIONS \n1. Preheat the oven to 425° F. Line 2 baking sheets with parchment paper. \n2. Cut the cauliflower into small florets. In a large bowl, combine the chickpea flour, water, garlic powder, sesame seeds, and pepper. Whisk to combine. The resulting batter should be fluid but thick enough to coat a piece of cauliflower and pool only slightly once set on the baking sheet. If the batter is too thick/pasty, add water by the tablespoon until you reach the proper consistency. \n3. Drop the cauliflower florets into the batter and stir until all pieces are coated. Using a fork, carefully transfer battered cauliflower to the baking sheets, leaving 1 inch of space around each floret. \n4. Bake the battered cauliflower for 20 minutes. While the cauliflower is baking, make the sauce. In a small saucepan combine the tamari, date syrup, rice vinegar, tomato paste, chili paste, garlic, ginger, and sesame seeds. Bring the sauce to a boil on the stove over medium heat. Simmer for 5 minutes or until slightly reduced. Set aside. \n5. After the cauliflower has baked for 20 minutes, remove and let cool slightly. Once it's cool enough to handle, transfer the par-baked cauliflower to a large bowl. Cover the cauliflower with all but 1/4 cup of the sesame sauce. Toss to thoroughly coat the cauliflower. \n6. Bake the cauliflower for another 15-20 minutes, or until the edges are starting to darken. Depending on positioning in the oven and just the overall hotness of your oven, you may have to take them out of this second bake sooner. Just keep an eye on them! Remove the cauliflower when the sauce has “set” around the edges and all florets are a deep golden brown. Serve in lettuce wraps, on rice, etc. , drizzled with remaining sauce and topped with extra sesame seeds, and chopped green onions. \nPad Thai \nPAD THAI SAUCE ( makes 1 cup/ 240 ml) \n 4 oz date syrup \n 2 tbsp peanut butter \n 2 tbs low sodium Tamari \n 1 garlic clove \n ½ inch fresh ginger \n 1 tsp hot sauce OR red pepper flakes \n Juice of ½ a lime \n 1 tsp mushroom powder (optional) \nSTIR-FRY \n flat rice noodles (Lotus foods are great) \n broccoli, broccolini or bok choy cut small \n 1 carrot, cut into matchsticks or sliced \n 1 red pepper, sliced thinly \n 1 shallot, diced finely \n ½ cup frozen edamame \n 3 spring onions, white part sliced thinly and green part sliced into ½ inch segments \n 3 garlic cloves, diced finely \n 1 cup bean sprouts, cleaned-optional \n 2 tbsp crushed roasted peanuts \n fresh lime, to serve \n fresh cilantro or Thai basil (or both) to serve \nINSTRUCTIONS \n1.
