many expressions—serious, comic, colloquial—that have been used by thefarmer and the brewer,on both sides of the bar andin the home, during the long and interesting historyof this country's traditional drink \nIllustrations by Derrick Harris \nWith an introduction by Ivor Brown \nWHITBREAD &CO LTD LONDON ECI \n1 \nIntroduction \nTo anybody who finds words fascinating because of their curiousorigins, charming noises and stimulus to fancy and to feeling, thevocabularies of the British crafts must be a continual delight.Theyhave given us some astonishing names for the side-lines of the trades andprofessions,as any viewer of 'What's My Line?’on television will know;they have provided us with family names both handsome, like the Lorimers, and solid, like the Pargeters.(The first were the makers of bits and spurs, the second plasterers.)So naturally when I see the name of Brewer,I feelinclined to raise my hat. For,in the word book or encyclopaedia whichI have the honour to introduce, the Brewer is thus defined: \nAn artist who by his choice of barleys and other ingredients and hissensitive control of the entire brewing process, produces your beer theway you like it. \nI am not sure that every pint of British beer,be it called Bitter,Granny,Wallop,or Wompo,to take some of the names that are listed later, deservesthe compliment of attribution to a major artist. But the best beers certainlydemand a'sensitive control of the entire brewing process'for their composi-tion.This last word, composition,is a term much employed in the fine arts.So it is only just that we should firmly tell the Wowsers and Kill-joys thatthe word art has as much right to be used in the preparation of a dish orbeverage as in the making of a book, play,or piece of music. The Wowsershabitually talk of the Liquor Traffic,a term which they apply inclusivelyto the finest vintages of Burgundy,a supreme Cognac, the unique distillingof a pure malt on Speyside and the subtlest preparation of a blended whisky, and also,of course,to the many processes, hereafter briefly described in thisanalysis of brewers'lingo, which go to the provision of 'beer, glorious beer.' \nLiquor Traffic!(Note that the word traffic is usually kept for thingscontemptible or even illegal, the sale of old horses for slaughter, commercein dangerous drugs, and so on;thus the purposed insult is the more obvious.)One thing at least this book demonstrates to those who hate all vintners, distillers and brewers and dismiss them as Liquor Traffickers;namely thattheir word of contempt can be thrown back in their own faces.Liquor, asdefined in the dictionary which follows,is ‘the term used throughout thebrewing industry for water'.Water!Who then are the Liquor Traffickers? \nThe reader of what is to come will soon realise that a vocabulary of ale \nand its absorption can afford a fascinating commentary on social habits andthe changing of our ways.Take, for example, the word bar and its variousprefixes and sufixes.First note that this simple English word has run(orhas been foated)round the world. It is so easy to spell and almost impos-sible to mispronounce. It provides what most desire muchly. Therefore, inevitably,it has been a universal favourite.I was once baffed, when inAthens,by seeing the word MPAR frequently and conspicuously writtenup.'What strange Hellenism is this?\"I asked myself—until I discoveredthat modern Greek has lost the letter B and substituted MP.You can thenbe sure of a bar, even if it's a mpar, and fairly sure of beer (in some sort)wherever you go. \nThe English bar has the particular interest of its subdivisions. The SaloonBar at one time represent","cbCait62B5kiALp6","https://ap.wps.com/l/cbCait62B5kiALp6","pdf",2859949,46,"English","# Word for
